KKAO Chocolate Factory is Brisbane’s first bean to bar chocolate manufacturer.
We make chocolate from the bean. Our chocolate is pure and is made to retain the nutritional benefits of the cacao bean. We’re a healthy alternative to the big name chocolate brands as we believe chocolate is more than just a great confectionery treat.
Our beans are grown in the volcanic rich soils deep within Papua New Guinea's rainforests. We responsibly source our beans direct from farmers paying over the New York Exchange Rate. That way our farmers are fairly compensated for their product and ensures the sustainability of the cacao industry.
Once the beans arrive at our factory, we slow roast them at a low temperature to minimise any chemical and physical changes to the beans whilst reducing the concentration of volatile acids ie bitterness. We stone-grind the beans to release the cacao butter and create a delightful, smooth, rich chocolate. We add pure ingredients so we can limit the amount of sweetener we add to our chocolate without compromising on flavour, such as freeze dried strawberries, raspberries, bananas, blueberries and many more.
We’re passionate about our environment and the impact we have on it. So, we’ve come up with some clever ways to remove waste from our factory and reduce our industrial footprint. Come and try our cacao compost - did you know plants love chocolate too?
