DELICIOUS brings cutting-edge innovation to plant-based dairy alternatives, delivering delicious, nutritious, and accessible options like cheese and kefir. Leveraging advanced microbial fermentation and bioinformatic tools, the project harnesses tailor-made microbial fats, yeast biomass, and fibre-producing strains to enhance the flavour, texture, and nutritional quality of plant-based products.
By combining precision fermentation with natural ingredients, DELICIOUS avoids the use of additives and ultra-processing while achieving superior sensory properties. This innovative approach aligns with the EU's focus on the microbiome's role in improving flavour and texture to drive a dietary shift toward healthier and more sustainable food systems.
The project's overarching goals are to accelerate the adoption of plant-based diets, enhance nutritional profiles, and significantly reduce the food industry’s environmental footprint, all without compromising on taste or quality.
