La Crosse Distilling Co. is a craft distillery producing certified organic spirits. Our entire operation is centered around environmentally sustainable practices. We operate a geothermal powered facility. We partner with local family farmers to source the organic grains and raw ingredients. We repurpose our spent grains into feed for livestock – and offer opportunities to repurpose spent barrels by partnering with local and regional breweries.
Environmentally Sustainable
We partner with local family farmers who share our values in environmental protection and sustainability. Our network of farmers institute practices such as organic farming, biodiversity, open-pollination and no-till. The grains we grow include heirloom varietals and create habitats for pollinators such as bees, butterflies and hummingbirds.
Geothermal Production
During the last Ice Age, when the surrounding land was scraped flat by glaciers, La Crosse remained untouched creating the unique bioregion including glacial aquifers of fresh water. The glacial aquifers serve as our renewable energy source. Glacial water is used as a source of heating and cooling in the distilling process. Geothermal energy is also used to temper our facility.
