Fabien JOUVES est issu d’une vieille famille paysanne du Causse. Il devient vigneron en 2006 en créant le Mas del Périé sur les plus hauts coteaux de Cahors.
Le Malbec (Cot) y est le cépage roi. De par la situation du domaine à la jonction des terroirs des coteaux du Quercy et ceux de Cahors, la sélection parcellaire fut une évidence pour exprimer les différentes facettes du Malbec. Cette expression du terroir est renforcée par une agriculture Bio-dynamique respectueuse de la vie, de la plante, de l’Homme et de son environnement.
La vinification du raisin au chai se fait naturellement, sans intrants œnologiques, et l’accompagnement du vin jusqu’à sa maturité, en cuves béton, fûts, foudres et amphores, suivant sa personnalité.
