RISTOLAB was born from the synergy between a chef and a researcher.
It is a scalable hybrid restaurant-laboratory situated in Pioppi, in the Italian rural region of Cilento, where Ancel Keys conducted his studies on the Mediterranean Diet.
The aim is to research and cook traditional, seasonal, healthy and sustainable food to preserve the local bio-cultural diversity and provide an added value to the gastronomic experience of consumers.
