We believe that sustainability comes first. We believe in a circular and self-sufficient society. We really do believe that the restaurant business as well as people can and want to be sustainable. At our restaurant, Sustainaboule, we make creative, nutritious and tasty food where every bite makes a positive impact on planet earth!
One third of all food production ends up as garbage, which is completely insane! We maximize each food when we create our dishes and drinks, even parts that are usually thrown away. We save food from suppliers and distributors that otherwise would end up in the bin and we grow a portion of the foods ourselves. Leftovers that can’t be used are going into our compost to become rich soil for the restaurant garden. We believe in zero waste restaurants, Our mission is to show that it works and how it can create value. Our vision is a restaurant industry where nothing goes to waste.
