Cereal Quality Lab (CQL) is a research laboratory run by Dr. Joseph Awika (Professor of Food Science) specializing in Cereal Chemistry. Dr. Awika is looking at mechanisms by which secondary plant metabolites and minor grain constituents can be optimized to improve food quality and human health.
The scope of research activities carried out by Dr. Awika's team in the Cereal Quality Lab includes:
>> Enhancing the nutritive quality of grain-based foods through the use of grain components with high human health benefits and improved processing methods;
>> Exploring grain polymer (protein and carbohydrate) chemistry, functionality, and novel applications;
>> Health effects of grain components, especially secondary metabolites, and how processing alters these effects, and
>> Application of grain polyphenolics in foods
Grain quality testing is also routinely carried which includes
- Kernel characterization
- Weight, density, and volume determination
- Milling performance
- Oil, protein, and starch quantification by NIR
- Flour mixing behavior
- Tannin quantification
- Baking trials (breads and tortillas)
- Starch characterization, and
- Texture analysis
CQL also has the capability to carry out
- Pilot scale grain processing and baking
- Milling of small grains (wheat, sorghum, etc.)
- Baking trials in the laboratories fully equipped for all bakery manufacturing
- Developing lab for bakery products
- Producing wheat and corn tortillas and tortilla chip production and quality evaluation
- Characterizing polyphenols and other secondary metabolites in cereals, pseudocereals, and legumes (quantitative and qualitative tests available for phenols, tannins, flavonoids, anthocyanins, etc.)
- Testing antioxidant activities using various methods: ORAC, TEAC, among others
- Analysing specimens using UPLC-MS targetting small molecules and their cellular and animal metabolites
