When working on a Master's program in Food Science, Anna did a project that combined her love for product development with a newfound interest in food functionality. She created a fake product called "All You Can Oat". When her husband, Michael, did a biomedical screening and found his genetic pre-disposition for high cholesterol was already affecting him, he took action. He wanted to incorporate more healthy foods that were proven to remove cholesterol and reduce inflammation. Realizing the health benefits of oats from her paper, Anna encouraged him to eat oatmeal every morning. She also showed him the many flavor varieties she liked to create for oatmeal. This led to the idea of packets of flavor, good fats, and more fiber that could be easily added to oatmeal to make it more nutritious and tasty. Anna shipped out samples of various flavors to family members and friends who enjoyed it in yogurt, smoothies, grits, and even sprinkled onto cold cereal! They were popular enough to take the concept and turn it into a real product. The packets are made in a licensed kitchen facility and Anna has a food processor license and seller's permit through the state of Wisconsin. Michael is pursuing a degree in Sustainability, so we carefully searched for packaging that was biodegradable, recyclable, and compostable, and that comes from recycled material. This increased some costs but was worth it. You can feel good about what you put in your body and what you put in the earth!
