Our goal is to guide the wine to being what it is capable of, not forcing it to be what we want it to be. To this end, a few more “values” are forced upon us. Nothing Added and Nothing Taken away (thank you Ms. Lapeltier for that saying). We do not remove things from our wines (Reverse Osmosis, Spinning cones, ect). Not that we could, that machinery is expensive. But, more importantly, we don’t really add anything either. Not as a dogmatic thing. Not for some hopes of being a “Natural Wine” producer (more on that later). But, because we do not want to force the wine. So, we generally don’t use cultivated yeasts, we don’t add DAP (nutrient) and only occasionally will we use yeast hulls, no enzymes, no additions (including sugar, color, tannin, acid, ect).
