Στις αρχές του 2009 ο Νίκος Ζερβός ανακαλύπτει τυχαία στο κέντρο της Αθήνας ένα μικρό καφεκοπτείο που μύριζε από μακριά φρεσκοψημένο καφέ.
Ήταν μια μικρή γωνία στην οδό Μπενάκη της εταιρίας TAF και κάτι συζητούσαν για ένα «τρίτο κύμα καφέ».
Μετά από αρκετά εξαιρετικά espresso και μια σύντομη συζήτηση με το προσωπικό, ο Νίκος ήξερε πολύ καλά τι θέλει να κάνει.
Παρά τις δυσοίωνες προβλέψεις λόγω της οικονομικής κρίσης αποφασίζει να ανοίξει το πρώτο Specialty Café στην Κρήτη και ένα από τα πρώτα στην Ελλάδα και το κάνει τελικά τον Σεπτέμβρη του 2009 στο Ηράκλειο.
