To produce yeast extract, the contents of the yeast cell are broken down by enzymes and the cell wall is removed. Simply put, yeast extract is made of natural components from the yeast cell without the surrounding cell wall. Processed fish / meat and analogues ; In addition to being flavour improvers, yeast extracts also improve the texture of meat products, help to reduce fats, and serve as binders in recipes
Dairy ; Incorporated into dairy recipes, yeast extracts improve the overall flavour profile of the product; and because of their richness, creamy products seem fattier and richer
Bakery ; Levex allow reducing the amount of added flavours . Levex could be also be used in sweet applications, they bring cocoa, caramel, butter, creamy, and baked notes, as well as a rich, long-lasting flavour.
