Tout commence en 1998, à Laval-du-Tarn, lorsqu’un éleveur et fromager réalise sa propre fabrication de fromages au lait de brebis issu de l’agriculture biologique.
L’entreprise a su parfaitement évoluer au fil des années, tout en gardant ses objectifs primaires : Contribuer au développement de l’agriculture et de la production biologique ; Mettre en avant les savoir-faire locaux.
En 2009, pour diversifier la gamme et répondre à la demande des consommateurs, une nouvelle fromagerie a été construite au Massegros, un petit village de Lozère, à la frontière du Parc Régional des Grands Causses et du Parc National des Cévennes classés au Patrimoine Mondial de l’UNESCO. La société concilie ainsi traditions et modernité.
Depuis 2012, Lou Passou Bio élargit la gamme en fabriquant des produits au lait de chèvre et de vache.
