Le Restaurant Saisons se trouve à l'Ouest de Lyon, au cœur d’Ecully dans le Château du Parc du Vivier, construit en 1890 par une fameuse famille de soyeux lyonnais : La Famille Cottin.
C’est en 1990, dès la création de l’Institut Paul Bocuse, par Gérard Pélisson et Paul Bocuse lui-même, que le Restaurant Saisons a ouvert ses portes.
