The Award-Winning Old Quebec Cheddar is made with 100% Canadian Milk. This produces smoother, firmer, textured cheese. Canadian cheddar lacks the bitter and sour flavors sometimes found in many American-produced cheddars. Our cheddar is thermalized not pasteurized. This allows for a true cheddar flavor. Low-moisture cheddar allows for slow aging and flavor development while producing a sweeter finish. Our manufacturer won BEST AGED CHEDDAR IN THE WORLD in 2022 when they entered a 2-year version of this same cheddar. Old Quebec is available in 3-year Vintage, 7-year Vintage Reserve and, soon to be released, 10-year Private Stock. S. Clyde Weaver is the predominant name in Smoked Meats and Cheeses in South East Pennsylvania. We offer two brick-and-mortar stores as well as nine Farmer's Markets stretching from Allentown, Harrisburg, Lancaster, and Philadelphia.
