Head chef at Carlotta, a restaurant located in Canberra’s CBD a Mediterranean & Italian style dining experience. It’s the first ACT restaurant venture from Chris Lucas of the LUCAS restaurant Group well known for their several restaurants in Melbourne, Sydney and now the nations capital, with the most well known being Chin Chin. Before undertaking the position at Carlotta I was Head chef at Mona Farm located in Braidwood NSW, working under executive chef Tristan Rebettes; ex (Sepia, Est., Rockpool, St. Peters) Previous to Mona, I was Head Chef at Sage dining rooms in Canberra, working under executive chef James Viles. (Biota, Dining by James Viles) I’ve had head/ sous chef experience, as well has working in hatted restaurants, And other cuisines including; French/european, Asian, southeast Asian and modern progressive Australian dining, with all this I have acquired a broad skill set and a plethra of diverse kitchen experience & knowledge.
