As the Food Safety and Quality Program Manager my primary responsibilities were to maintain the facility's HACCP, SSOP, and other pre-requisite programs. I was also responsible for providing training or re-training to employees as needed as well as presenting these policies to new employees during new employee orientation. I was also responsible for receiving, documenting, and investigating customer complaints related to products. I also coordinated audit preparation with the Quality Director and Quality Supervisor.After returning from a COVID-19 related furlough, I inherited the duties of the Quality Supervisor which included managing 13 employees across 3 shifts, coordinating our environmental swabbing program, microbiological sample shipments, and monthly facility audits.

As a production supervisor I worked cross functionally with all colleagues and departments to not only efficiently produce safe and quality product but to also ensure a safe working environment for our employees and drive continuous improvement initiatives to meet both of these objectives.I had many learning opportunities in this role as I worked many different shifts on both sides of the operation. On 3rd and 2nd shifts I strengthened my Spanish-Speaking skills as I got to know and train new employees. On day shift I learned and mastered the planning side of the operation and worked hard to stay ahead of and anticipate customer order changes for our Ready-to-Eat products. While supervising Raw operations I learned the importance of raw material inventory tracking and adjusting production plans to minimize inventory loss.As far as administrative duties go I managed time cards for up to 50 employees at a time. I was also responsible for tracking, reconciling, and trouble shooting production yield and inventory data. I also worked closely with my team to coordinate daily labor needs, track vacation scheduling, and coordinate safety trainings and safety committee meetings.

As an associate supervisor my primary initiative was learning the role of a production supervisor in preparation to supervise 3rd shift operations. I was trained on various administrative duties such as payroll, inventory tracking, yield troubleshooting, and labor delegation. I also built upon my leadership foundation; how to lead employees of different backgrounds and hold them accountable for their work.

To develop a bread dough that was resistant to drying out upon warming in the microwave. For this project I tested multiple different starches, gums, and fibers to determine the best combination.To develop two new frozen food products using co-extrusion.

Organize materials and samples for various consumer sensory analysis sessions.Conduct analytical tests on food products and compare those results to the objective results.

Observe, practice, and document all quality assurance tests on products to produce quality assurance staff training materials.Track the protein-fat-free ratio of raw meat materials at each stage of production up to the final product in order to determine which processing steps could be improved to increase final product yields.I also participated in multiple shelf life studies, product cuttings, food safety meetings, and weekly management meetings

Organize the laboratory spaces and help to de-clutter the space from old documents.Test milks and rennet samples of different radiation levels to determine the optimum combination for cheesemaking in space as part of the NASA project.

Support our students in the understanding of food science, food safety, food chemistry, ,and food microbiology.Submit suggested exam questions to the professor to include on the exams.Distribute and collect exams as well as act as a moderator.
