I left school to take a trade in motor mechanics which I did for 5 years before realising it wasn't for me. I then tried a few different jobs before finding I had passion for cooking. I did a level 2 apprenticeship in cooking and food safety while working at the sirloin inn in hoghton. As I had arrived in catering later than most I wanted to advance quickly so I found internal progression limited and moved jobs a few times to learn all aspects of the hospitality industry. In 2010 I was given a head chef position at Summat to ate steak restaurant in Hindley where I worked for two years before being offered the chance to run my own pub with my fiancée in a beautiful village in wiltshire. We run the pub for 12 months before deciding to look at better prospects.. After trying to start a business but having no capital my fiancée and I took a management couple job at a pub in Redditch. In 14 months we turned the pub from a loss to a profit we were offered a pub in Somerset. We were there for 6 months but are now moving back to the north to be closer to family and friends. After a little time out working for friends we took another pub on for a management company in Mellor, Stockport and worked hard to turn it around before it got a big refurb. With no real budget for anything we took it from £1k to £5k a week. At this point my fiancée and I decided we needed to get a chunk of our lives back from the time hungry job that is pub management so my fiancé got a job managing a cafe run by the Lancashire deaf charity and I got a job managing two totally wicked stores.
