R&D Bakery InternNewly Weds Foods Jun 2020 - Aug 2020Chicago, Illinois, United StatesDuring the summer of 2020, I had the opportunity to serve as the Bakery R&D Intern at Newly Weds Foods in Chicago, Illinois. During the summer I had the opportunity to develop a new product line with five different bakery applications which will be featured in the company's 2021 bakery catalog. Additionally, I worked directly with the bakery director to identify the gold target and to continually seek advice and approval for formulations. Throughout the summer, I conducted an independent bake time & temperature study as well as a shelf-life study. Additionally, I consistently tested products for specific gravity, viscosity, pH, Aw, and moisture. Finally, I presented my final project to the management and R&D team and produced an 18-page scientific report. I am very grateful for my experience at Newly Weds Foods as it provided me with a deeper understanding and knowledge in the bakery industry, research and development, and gave me a wide network of colleagues in the industry. -
