Accountable for scoping, designing and delivery of the operational strategy of a new start-up branded food offer within the UK market, the Just Falafel brand has it origins in the UEA and is the first food lead brand to expand into the UK market, a major part of my role has been to define and implement the brand standards, Health and Safety procedures and business processes for the UK rollout. Delivery of the sales and profit plan for all UK restaurants through the operational strategy. Promote best practice, operational strategies and share learning’s and successes from the UK market to the global brand.

Overseeing of concept development and implementation of two client and consumer demanded food lead brands "more" & "Puur" for the Eurest Foodservices. Delivering a long-term strategy and developing and executing marketing plans. Key responsibilities included; unit design, defining products and pricing, merchandising, advertising and promotion strategies. Accountable for delivering the assigned brand’s profit, volume and market share.

Responsible for the management & development of EAT's Retail IT System (EROS) and the company IT Issue Management System (Footprints). As well as leading, managing and developing the team responsible for supporting and maintaining these system I oversee the project management of IT related projects

Responsible for the scoping, designing, implementing & training a new bespoke, hybrid system operating on the Microsoft .NET Framework. The system was specifically designed to included all reporting and shop tasks duties for EAT’s Retail Operations.

Responsible for the management of the highest turnover area within the EAT Brand. Full autonomy for implementing & ensuring compliance with all operational activities, and ensuring high standards of customer service at all times. Management and development of a large team of shop managers, responsible for enabling their successful performance. Undertaking full financial responsibility for the Area. As an Area Manager other tasks included company wide yearly budgeting & business forecasting, supporting colleagues & shop managers when required.

Day to day management of the highest turnover area within the high street retail division. Develop the sub brand of Café Thorntons into a new modern successful design, review café offering and services standards. Full responsibility for the store teams and financial accounts.

Sustain and grow a 10 million pound turnover UK and International franchise business within the brand concept of ‘Costa Coffee’ to a challenging budget.

Developing and implementing any change requirements to the current business needs for both operational and financial departments. Principally overseeing all the operational and financial departments’ interest in the acquisition of a £1.4m new EpoS system.

Introduce and develop an internal audit function to a young, dynamic brand concept of ‘Costa Coffee’
