Food & Beverage DirectorIncreasing profit through cost management and reducing expenses, running 5% under budget in beverage cost (19% cost end of year 2015) and 2% under budget in food cost directly overseeing three outlets and the banquet department.Review P&L’s with General Manager, forecasting sales, labor and cost monthly. Review and assess Santa Fe properties cost, pricing and revenue, achieving a reduced beverage cost year to date and increased profit at the Eldorado Hotel & Spa.
