Shola - Karachi Kitchen: My Culinary JourneyI’m Aida Khan, chef and founder behind Shola - Karachi Kitchen, where I’ve been winning hearts (and bellies!) in London and Islamabad. My journey with Pakistani cuisine began in my foodie family and flourished through my travel food show, “For The Love of Food,” on Pakistani television.When I moved to London in 2012, I noticed a gap for authentic, home-cooked Pakistani food. I started adapting my family’s recipes for my children, then completed training at Leith’s School of Food and Wine, where I learned to apply modern techniques to traditional recipes. This led me to launch ‘Gourmet Karachi Supper Clubs’ across London.Shola has been my labor of love, emphasizing fresh ingredients, fragrant spices that we freshly roast and grind in our kitchen, and the deep, powerful flavors of Pakistan. I was honored to win the Food Entrepreneur of the Year Award at the 2019 Asian Business Awards and have shared my recipes on ITV’s The Lorraine Show and John and Lisa’s Weekend Kitchen.Since February 2022 for 2 years Shola hosted a pop-up every Thursday night at Soho House, White City. In July 2022, we took over the Shack at White City Poolside, serving Pakistani street food all month. Through Shola, I continue to introduce the vibrant flavors of Pakistani cuisine to a wider audience
