I was responsible for overseeing the bakery and pastry department of a vegan cafe.This included: creating and editing recipes for a french themed pastry and cake menu, implementing inventory and budgeting techniques, and managing a small staff of about 6. I also taught a holiday cake decorating class for adults which was open to the public. As well as a children's cookie decorating class open to the public.I worked closely with other cafe managers to maximize quality and sales during the Pandemic. This included training new hires with the skills they needed to uphold company standards, delegating tasks, arranging team meetings, boosting company morale, and engaging employees in the design process. I also did a weekly and monthly inventory. This included supply purchasing using several vendors such as SYSCO, David Rosen Bakery Supply, and Pfeil and Holing. With a great team I was able to decrease labor cost for the company over a period of 1 year.I also assisted in working the front of house a two times a week. This consisted of answering email and phone inquiries, placing orders, working with clients to sketch cake designs, taking deposits/payments using SquareSpace, and selling cupcakes. Often I would be responsible for continuing communications via phone and email with clients after initiating their order. This meant carrying out design and delivery logistics for high end and celebrity clients. On occasion I would even deliver cakes to places like Washington, D.C. where I would also be responsible setting up the cake display.On weekends I would teach 2.5 hour cake decorating classes where anyone can learn! This was open to clients ages 14 years and up. I would go over basic techniques and offer recipes and reassurance to individuals participating.

I was responsible for attending to children of various ages (newborn-4 year olds.)My regular schedule consisted of planning daily activities for a group of 10 children ages 3-4 years. This included: meal preparation, potty training, teaching basic writing skills,and scheduling outdoor and indoor play activities. Due to my creative nature I also took it upon myself to decorate the classroom and hallway with large displays for holidays and special events. This greatly increased parent engagement.

I learned how to properly stack, crumb coat, and top coat buttercream cakes as well as fondant cakes. Assisted the pastry chef in creating a monthly dessert menu for both Wild Ginger and the Triple Door. This included but was not limited to creating: bread,s jams/jellies, cheese plates, charcuterie boards, hand made chocolate truffles, tortes, cakes and petite fours.
