With a Food & Beverage / Hotel Management career spanning more than 40 years, I’ve been privileged to lead and work with large and diverse kitchens and talented chefs, for some of the world’s leading luxury hotels and F&B operations. My speciality is in developing and opening new luxury properties. Having spent the last 12+ years with ITC Hotels, I am currently the Senior Area Executive Chef for Sri Lanka - opening ITC’s first international hotel in Colombo. With a proven track record for delivering top and bottom line financial results as a dynamic and accountable leader in high stakes projects. I have previously also been part of the pre-launch team for ITC Grand Chola as their Senior Executive Chef. Managing F&B operations for 600 rooms, eight distinct award-winning restaurants, a buffet restaurant, a pastry shop and two bars, it totalled 11 food outlets, in addition to banquet operations with a capacity of 5000 guests. I have also supported the opening of: ITC Kohenur Hyderabad, ITC Narmada Ahmedabad and Welcomhotel Coimbatore.As the architect and head of the team that created Avartana (a Top 30 Restaurant in Asia), I’ve been excited to watch the joy that this unique Indian experience has given to those who have savoured the cuisine of the Southern Indian peninsula in innovative, traditionally-flavoured dishes using global techniques.Recognition for ITC Hotels work includes: * Avartana awarded Best Restaurant Top 30 in Asia 2023* Chef of the Year for ITC Hotels 2018-2019* Times Food Awards Chef of the Year 2016* Seven ITC Grand Chola restaurants selected as winners for 2016 in Times Food AwardsPrior to my time with ITC Hotels, I have led multiple large-scale food & beverage and kitchen operations including for one of the world’s largest cruise lines - Carnival - where I oversaw the food operations for over 3500 passengers, 1100+ crew producing over 20,000 meals per day - based out of America. With my time at ITC Hotels nearing an end, I am currently open for new opportunities where my unique skills in large F&B operations and hotels will be essential.
