A great opportunity was presented to move from the design & manufacture of hospitality operations into the construction which allowed me to use my original qualifications . This position is to take a clients brief and to deliver a completed kitchen that is ready to start operations.My role has me responsible for all stages of the project build and includes liaising with architects, kitchen design, documentation, service coordination, equipment procurement, equipment manufacture, site install, testing, commissioning and training.A strong emphasis is placed on operation efficiencies and a unique system is used to guide clients through their design and have them understand how their operation will function. With a manufacturing and design back ground, combined with the ability to make construction decisions allows the client solutions to their operations by incorporation all three elements. I work closely with Interior Designers and Architects to incorporate their vision into the projects and have been able to offer unique one off food display and food buffets concepts that have been achievable.

Started as a detailed draft person in the drawing office and later as the drawing office manager responsible for all documentation for the manufacture of hospitality equipment. I was involved with most of Australia's and some international hospitality consultants in taking their designs and preparing drawings to have the projects manufactured and coordinated with site. While learning and starting out using hand drafting, I became experienced in CAD systems both 2D and solid modelling. When managing the office I was able to lead the company through a change in software and a complete rewrite of the library system. Many staff were trained in the office and were later elevated to other position where their experience was beneficial.My experience in the design of equipment included custom refrigeration, buffets, heated displays, wash conveyors, food mixers as well as many custom one off display units. The role was a hands on position and I was directly working with the production workshop in developing of designs especially with refrigeration. With my manufacturing knowledge I was able to offer clients equipment designs that were to their budget and performance specification. With my involvement of working with consultants over many years I have been exposed to many of their designs and have built a great knowledge base of their work. I combined this with my background and produced designs for the company over a period of 5 years with them.

Worked in the property development office that had a portfolio of 115 hotels throughout Queensland. Drafted proposals for maintenance and new construction works for the food and beverage operations. Worked with customer engineers in beer systems design and installation. Worked full time while completing my structural drafting qualifications.
