Passionate about speciality coffee, I have been roasting, blending and brewing coffee for the last twenty years. I’ve lived most of my life in Sydney, a city which runs on coffee. Australian coffee consumers are educated, know what they enjoy and expect very high quality coffee prepared by both traditional and cutting edge methods. Honing my skills in this environment led me to become involved in international barista and roasting competitions. As head judge I have prepared and led teams evaluating the best roasters and baristas from Australia and around the world. In my capacity as manager of Quality Control and Staff Development at Forsyth Coffee and Tea, I designed and led training workshops for our staff and popular retail courses for our customers from 2010 to early 2017. Being a coffee nerd, I am constantly researching and learning about new roasting, brewing and extraction techniques.I moved to the North East of England in early 2017 after visiting the region several times over the past six years (my partner is a Geordie and I'm perfecting the accent!) seeing independent coffee roasteries start to emerge and challenging the dominance of high street brands.I started Baristocracy Coffee Ltd with my partner in March 2017 after three years of dreaming and planning. We offer wholesale and retail speciality coffee, professional and at-home barista training and coffee education experiences. We also offer take away coffee by the bag and cup from our roastery in North Shields.
