Out of the 'prima materia,' CPF's artisans have produced a new gold standard in coffee: roasts that bring out the subtle nuances of flavor within each coffee variety. And blends with distinct taste and aroma profiles that are consistently well-balanced, delicate and velvety smooth.Selection criteria involve a careful examination of the soil and climate to guarantee the highest level of cup quality. Sensory analysis involves a scientific “cupping” technique to evaluate beans for aroma, acidity, taste and tactile balance. Beans are picked by growers, up to four times, and wet processed within 24-hours after harvesting. In Florence, the beans are reselected, then roasted and cooled separately according to the unique characteristics of each single-origin. To maintain freshness and preserve flavor integrity, the roasting and cooling processes take place prior to blending and packaging. Human intervention throughout the entire process makes Caffè Pontevecchio a boutique, artisanal brand of coffee and stainless steel espresso machines (which can be personalized with a proper name and/or side covers in fine Tuscan leather or tempered glass). CPF's signature lines include Sinfonya (100% Arabica), Oro, Rosso e Deca. Periodically, CPF will create particular Arabica blends such as 100% Ethiopian or similar.
