Provided medical nutrition therapy and counseling among an acute care hospital, rehabilitation hospital, and several outpatient clinics with main area in preventative cardiology. Regularly reviewed and revised heart healthy nutrition handouts and assisted with cooking classes in the Learning Kitchen on site.

Illinois

Taught short interactive food demonstrations and lesson plans to students (ages 5-12 years old) attending after school programs. The lessons promoted vegetable intake and improved students' outcome expectations related to eating vegetables. Assisted with program evaluation and revised curricula development for vegetable lesson plans. This was a pilot.

Visited after-school nutrition program sites served by the Northern Illinois Food Bank to ensure their compliance with federal rules and regulations, gave corrective action as needed, and filed documentation per protocol.

Assisted with publication write up and development of training materials for Cooperative Extension Family and Consumer Sciences Programs under the guidance of University Professor and Extension Specialist Dr. Elena Serrano.

Blacksburg

Final project was the systematic identification of science and practice-based food, nutrition and wellness programs for dissemination by VA Extension Agents followed by a poster presentation at the campus-wide VT Summer Undergraduate Research Symposium.

Aided professor in laboratory course by preparing workstations, constructing quizzes, and guiding students with laboratory protocol on the functional components of foods, emphasizing the principles and science involved in food preparation.
