Taught a variety classes including classic French, authentic Thai, nutrition, artisan bread making, Mediterranean cuisine and Indian street food. Classes were designed to break down the components of dishes to better understand the composition and the role of each of the ingredients.

Seasonal private Chef on 105 ft yacht, responsible for running the galley. I explored local markets in each of the ports we visited, sourcing the freshest local produce. I designed the menus around the ingredients I was inspired by and created menus tailored to suit the celebrity guest's tastes and preferences.

Working in the prestigious 3 AA Rosette Colette's restaurant, I was involved in the running of the larder and dessert sections of the kitchen. We had a large team of 13 chefs under the watchful eye of head chef Russell Bateman.

Thailand

This role was to fully equip and mobilise an establishment from being open during the day as a cafe and bakery to being open during the evenings for a la carte dining. The director of the company envisioned French style menus to attract their niche of clientele. I taught the chefs the basics of Thai and French cookery, and created and taught menus to Thai students.
