F&B product and service development for P&O Cruises and Cunard Brands. Interpretation of brand briefs to ensure new initiatives meet passenger expectations and business targets whilst ensuring Brands remain differentiated. Development of the F&B concepts for P&O Cruises new addition to the Fleet in 2015, Britannia, including room operational specifications, designs, menus, pricing, resource requirements and specifications. Led a multi brand F&B team in the redesign of processes as part of a Hotel Operations Transformation project for CUK applying Lean techniques to conduct the process review and redesign; objective to eliminate waste and improve efficiency. Fleet of ten ships.

Leadership of ship and shore hotel operational teams that were responsible for the overall delivery and performance of hotel, retail and entertainment on board and product development. Responsible for the development of the overall product offering for two new additions to the Fleet, Azura and Adonia, their successful launch and the retro fitting of new concepts to selected ships. Formulated and implemented a strategy to improve Fleet results, passenger satisfaction increased by 3 points within the first nine months. Introduced new on board and shore team structures to improve operational accountability and performance. Worked within tight cost and revenue budgets and timescales.

Full responsibility for the development and start up of the operational aspects of a new Brand for P&O Cruises, Ocean Village, within a twelve month timeframe. Developed all new concepts for hotel, including F&B, accommodation, entertainment and retail to ensure that the new Brand was differentiated from the P&O Cruises offering and to attract new customers to cruising. Introduced new ways of working and recruited and trained ship and shore teams to deliver the new propositions. Led the addition of a second ship to the Fleet in 2007. Jointly led the development of a new organisation structure for shore operations to support the transition to a multi brand shore operations team in preparation for the addition of Cunard to the Carnival UK portfolio.

Managed all hotel related functions ashore to support the Fleet in effective delivery of defined hotel products and services to their passengers. Functionally responsible for hotel purchasing, specification and operational support for hotel IT systems, on board training, contract management of all on board retail operations including shops, spas, casinos, art and photography, public health support and hotel financial reporting. Implemented and managed competitive tender processes for on board retail operations and negotiated contracts. Led specific business projects including the move to a centralised purchasing function for the business, the introduction of new retail partners on board and heightened the commercial awareness of the on board management teams.

Shore based manager responsible for the teams on board who delivered hotel accommodation, retail, and front and back office administration services for P&O Cruises Fleet. Target setting, continuos improvement planning and implementation to raise commercial awareness and to retain our position as leaders in the UK cruise industry.

Development of the hotel training and development strategy and the management of associated budgets and resources required to support expansion of the Fleet. Recruited and trained 600 staff for the first new ship built for P&O Cruises for the British market. Established new service standards and designed and implemented relevant training courses to support the changes including the introduction of NVQ certificated training.

Recruited to set up the hotel training function for P&O Cruises in preparation for capacity growth in 1995.

Led a number of consultancy projects across a broad cross section of the hospitality industry including cost sector, hotels, leisure, commercial operations and healthcare. During this time I developed a strong client base and was successful in increasing sales to existing clients as well as gaining new business. Projects included, market and consumer research, resource reviews and resource planning, feasibility studies, audits ( financial, operational, contract management and monitoring ), competitive tendering and negotiation, food hygiene training for businesses, organisation of conferences and public speaking.

Held a variety of operational management roles within the food and beverage departments of West London and Central London premises. Last appointment was to the prestigious role of Hospitality Manager at Broadcasting House. This department provided a first class service to the Board of Governors and their guests, including eminent public servants and celebrities
