My name is Alyssa Correll and I am a baker, cake decorator, pastry chef, and lover of all sweet and pretty things. I have always been passionate about baking and have turned that passion into a career. I grew up in Las Vegas, Nevada where I studied Baking and Pastry Arts at The College of Southern Nevada for two years, while working in the hospitality industry. I was accepted to The Culinary Institute of America at Greystone in St. Helena, California in 2013, where I studied Baking and Pastry Arts and graduated from September 5, 2014.During my time at The Culinary Institute of America, I was given the opportunity to do a five month externship at Charm City Cakes West in Los Angeles, working with the team from Food Network's Ace of Cakes under Chef Duff Goldman, where I was taught how to decorate, ice, build, stack, design, and work with cakes of all occasions, shapes and sizes.After finishing my 5 month long externship at Charm City Cakes West, I had to return to Napa Valley to finish and complete my program at The CIA. On September 5, 2014 I graduated with an Associate's in Occupational studies in Baking and Pastry Arts. Upon graduating from the CIA, I have worked in fine dining restaurants, high-volume bakeries, hotels, Food Network sets and I have opened new concepts for restaurant groups and set up pastry departments for new hotels. Attention to detail, fine-tuning recipes, continuing to improve my skill set and communication and working with others are my focus until I feel confident to then open a bakery of my own, specializing in custom cakes and fine pastries.
