Catering Manager/ Chef De Partie
As Catering Manager and Chef de Partie, my role included the following responsibilities:-Preparing and cooking catering orders from office morning teas and lunches to weddings.-Managing multiple events in 1 day.-Delivering orders to clients in e-van and setting up catering on site, which often included decorating and presenting the food in an aesthetic way, also being knowledgeable about allergens and ingredients.-Managing the execution of catering at large weddings- setting up food tables, working a bar, managing staff.- Keeping a clean and tidy kitchen, and ensuring the kitchen runs efficiently, making changes to processes accordingly.-Assisting the head chef with ensuring ingredients in the kitchen are well stocked.- Managing time in the kitchen, pre preparing components and ingredients to ensure the kitchen is run effectively and on time.- Maintaining health and safety in the kitchen; ensuring the kitchen is clean and sanitised, upholding food safety procedures.-Maintaining the company's zero waste ethos by always ensuring the kitchen was using as close to no waste as possible. This included coming up with new ways of decreasing waste in the kitchen also.- Utilising my knowledge of veganism to assist coming up with new menu ideas that were both unique and exciting but also had waste and seasonality in mind.
