Responsible for the entire F&B department in the following vessels—Sun Princess (2200 Plus Pax) Royal Princess, Emerald Princess (3100 plus pax) 3 times on the Grand Princess (2800 Plus Pax) Pacific Sky/ 2x times Tahitian / Pacific Star & Coral Princess. Most of the ships ,I have been responsible for as Food & Beverage Director are - 3000 passenger capacity ships, 1250 crew As F&B Director on various Princess vessels, approximately 600 Plus F&B staff report to my-self. Princess vessels have two to three main dining rooms serving passengers to full capacity based on the passenger count , Steakhouse Grill, Crown Grill, Bayou Café, Italian specialty restaurant Sabatini’s, Pizzeria, Hamburger Grill, Ice cream parlor, 24 hour Room Service, Horizon Court Buffet- This is a huge operation serving full capacity of passengers at any given time, Bistro, Piazza Concept which consists of a Sushi &Vines Bar/ International Cafeteria , Special Services for F&B operations to passengers, Weddings, Private Parties and functions, 16 to 20 Main Lounge Bars depending on the size of the vessel
