AUTOMATIC DETECTION OF CARCASS CONTAMINATION•Developed a data science solution in conjunction with feasible hardware solutions to address the beef carcass contamination issues in the slaughterhouses.•Conducted a thorough analysis to obtain the optimum camera sensor among Multispectral camera, Hyperspectral camera, Thermal, and RGB camera that can differentiate between the impurities in the carcasses.•Implemented an Artificial Intelligence-based solution to identify and detect the two carcass contaminants variants – feces and ingesta from the carcasses images using various convolutions neural networks.•The segregation of contaminants from the meat using images is explored by using the image semantic segmentation methods with two different modeling techniques namely U-Net and MaskRCNN with pre-trained ResNet-50 as the backbone.• Implementation is done using the deep learning library - TensorFlow in AWS Sagemaker.
