About Amy Dalgleish

After a tropical start, over my life I have moved to progressively colder and colder places. Born in Brisbane, at 4 we moved to New Guinea. After nearly 3 years we moved back to Australia and my parents were so taken with Cairns, up on the Great Barrier Reef, that a 6 week holiday in a beach caravan became 6 years. Happily, not in the caravan. At 12 we went back to Brisbane and I thought it was cold. I had to buy a cardigan. I grew up there, studying Literature, French, Psychology, Biochemistry, Microbiology, Nutrition and Food Science. Work took me to Melbourne as an adult and I loved it. I bought my first ever proper winter gear - coats, hats, gloves, the whole bit. I was super hip and stylish, but cold. Then I spent 2 years in Ohio, where it routinely reached -20 C. I had to buy a down jacket, snow boots, fleece-lined trousers. I learnt to shovel snow, heat up my key to get the car door open, spin gracefully on icy roads without hitting anything. Back in Melbourne, I reskilled in Biotechnology. I wasn’t as cold as I had been in Ohio, so I took a secondment to New Zealand. It was cold in winter and only vaguely warm in summer, which was interesting. Intrigued by the concept of being cold all year round, I moved to Scotland. All these years later I am still held in her thrall. I am happiest by the sea, and especially love the islands, where the weather makes sense and the glorious scenery is almost too much to cope with, but love the highlands also, where my family is from. I have worked hard and sacrificed much to become a permanent resident. Did I overdose on sunshine as a kid? Do I have nomad blood? Do I find shaving my legs so tedious that I live somewhere you can’t wear a skirt without tights?Whatever it is, it has helped me hone many skills. I learn quickly. I'm self-sufficient but play well with others. I'm resilient, resourceful, creative, and manage change well. I communicate well. I'm a great troubleshooter. I'm detail-oriented and analytical but have big ideas. I research everything to death but then take the educated risk. I have worked in hospitality, the arts, customer service, office administration, allied health, food technology and biotechnology, in production and in management. I’m pretty useful.I now work in the Scotch Whisky industry and I really enjoy the ability to combine my science background with my other skills. I love that making whisky is not just a science, but an art, with a sprinkling of magic. My goal is to learn more and develop this career further.

I happily achieved my goal of combining my production and operations skills and experience with my love of whisky, working in the Process team as Pre-Distillation Assistant, where I gained a good understanding of the complete distillery process with in-depth knowledge of malt plant, cooking and low temperature processing (LTP) of grain, mashing, fermentation and yeast optimisation processes.This included:-Calculating malt needs based on production level predictions, ordering malt and controlling malt intake processes on site.-Malt milling, malt slurrying, and calculating malt inclusion for batch grain cookers and continuous LTP processes going to continuous mash tuns.-Grain transfer from the intake area to batch cookers and LTPs, and maintaining grain intake area on nightshift (including using forklift for control and removal of dust bags).-Charging batch cookers with grain, controlling cooking process, and discharging of gelatinised grain to mash tuns.-Performing all logging of grain and malt production figures for all pre-distillation vessels for every batch, and end of production day figures - on paper, excel and cloud-based manufacturing analytics program.-Performing month end stock reconciliation of grain and malt.-Isolation and de-isolation of plant assets and equipment for PPMs and breakdowns.-Regular CIPs of assets in malt plant, malt slurrying lines, and buffer tanks.-Ensuring adequate and timely delivery of steam from boilerhouse or bioplant to steam accumulator and delivery to batch cookers.-Controlling, monitoring and optimising all production processes on a PC based SCADA control system.-Responding to breakdowns and other issues.-Liaising with in-house engineering and external contractors for maintenance and repair of equipment.-Ensuring safety is maintained at all times on site.-Being on the nosing panel for new make whisky grain spirit, vodka and gin.-Working 24 hour shift pattern rota in a 24/7/365 continuous processing facility.

At The Famous Grouse Experience I conducted tours of the distillery, explaining in detail all manufacturing processes, as well as the history of The Famous Grouse blend, Glenturret Distillery, and Scotch whisky in general. This included higher level warehouse and blending experiences.I held nosing/tasting sessions of Glenturret single malts, as well as the single malts of sister distilleries The Macallan, Highland Park and The Glenrothes, and Edrington blends.I fulfilled ambassadorial and sales roles at whisky festivals and Highland Games.I performed retail activities in the gift shop - till sales, information, restocking, cleaning.I provided frontline customer service at the Welcome Lounge desk, greeting visitors and organising tour sales and numbers. Here I also provided a telephone service for tour bookings and other enquiries.I was able to learn more about the company and the whisky industry through visits to the company's bottling hall and sensory laboratory, along with visits to the cooperage and malting facility.I was selected by the company to attend a seminar on Sensory Evaluation of Whisky at the Scotch Whisky Research Institute, Herriot-Watt University, Edinburgh.I was nominated by my Manager to be a Mental Health First Aider for the site, and undertook training with NHS Scotland for that and for Suicide Intervention.

After successfully achieving Indefinite Leave to Remain in the UK, I rewarded myself with a change of pace from production and operations management in diagnostics and pharmaceuticals, having always been fascinated by the process of making whisky. I took on a contract position at Deanston Distillery in Perthshire.During my time at Deanston I ran tours of the distillery, explaining in detail all manufacturing processes, as well as the history of whisky and the Deanston area. I ran nosing/tasting sessions of Deanston single malts, as well as the single malts of sister distilleries Tobermory and Bunnahabhain and Burn Stewart blends. I helped organise the daily tour schedule and performed retail activities in the gift shop - sales, information, restocking, cleaning. I took bookings over the phone and via the Internet.I was also able to learn more about the business through lots of extracurricular reading, visits to the company's bottling hall and sensory laboratory, and by visiting a local cooperage.
