After graduating with a BSc in Food Business in University College Cork in 2007, I became interested in the area of health claims and consumer acceptance and completed a PhD in this area in 2011. With a keen interest in health and wellness communication, I then worked as a research fellow for University College Cork focusing on projects that included consumer acceptance, novel ingredients and new product development. I worked in the private sector, as a Communications Manager focused specifically on increasing consumer acceptance and developing in-house communication and marketing strategies, and as a Communications Advisor to European Institutions in the area of food and food supplements. I work in the Food Industry Training Unit in University College Cork which is dedicated to continued professional development (CPD) for those working in the food, agri-food and seafood sectors. In this Unit, the focus is on creating flexible, personalized and stackable pathways of progression whether that be through short courses, certificates, diplomas, masters face-to-face, online or a mix of both.

These scenarios could then be used in marketing strategies to increase and motivate consumers to purchase products that would benefit their health from a long-term perspective without feeling like it was a burden. This significantly impacts the liklihood of repeat purchase.
