As a chef-chocolatier by profession, I am an experienced entrepreneur in the food and beverage industry. I founded a café-chocolate shop called Karana in Cuenca, Ecuador upon completing my studies in gastronomy. We even opened a branch in Quito, Ecuador. In my role as the main chef, customer service representative, and product developer, I successfully ran the Karana location in Cuenca for several years.I then ventured into a more exclusive "bean to bar" chocolate brand called ALTAI, opening another location in the city center of Cuenca. This experience taught me the art of chocolate making from bean to bar and fine chocolate confections. This realization made me realize the importance of learning more about food and beverage management.With this in mind, I decided to pursue a Master's degree in Food and Beverage Management at the Basque Culinary Center in San Sebastian, Spain. Going forward, I am eager to continue learning and growing in the industry. I am especially interested in expanding my knowledge of cost structure, management processes, team leadership, and corporate culture.
