ARTISANWe formed The Slow Vinegar Company as a result of transforming our own hedgerow wines through alcoholic and acetic fermentations into unique wine vinegars. Taking our own wines through this process and turning them into amazing tasting wine vinegars was remarkable, interesting and rewarding. It took a couple of years of testing and tasting, learning and refining until we believed we had great quality and unusual wine vinegars and the idea of producing a range of commercial artisan products. Growing our own produce, finding it in the hedgerows or sourcing it from local farms allows us to make vinegars with full control over their provenance. We take time to hand make these vinegars, through every stage of the process. The wine is the first stage, fermenting fruits, roots, berries and blossoms and then ageing that wine for several months. Once the wine is matured we take it into its secondary fermentation into vinegar. As the alcohol becomes acetic acid the flavour of the wine begins to underpin the taste of the vinegar. Our original wine recipes are the base for our vinegars and what makes them taste different.You can read much more about our vinegars on our website.ART—The early YearsAfter secondary education there was only one way forward for me—Art College. This next step of learning and training opened up what became my professional career. I studied Fine Art specialising in printmaking but the content of my work came from an enquiry into fermentation. For part of my degree exhibition I made art works that explored the action of yeast on sugar. Great fun and lots of home made wine along the way! After an array of pay the rent jobs I have enjoyed a long stint working in higher education at Leeds Beckett University (formerly Leeds Metropolitan University), teaching across a variety of undergraduate and postgraduate art and design courses in Graphic Design, Product Design, Filmmaking, Animation and Printmaking. My time in higher education has been exciting and full of opportunity. Reaching Senior Fellow in the Higher Education Academy was fantastic but the significance of fermentation, which had underpinned my life long interests came bubbling up again....I left higher education and decided to put all my efforts into The Slow Vinegar Company.
