Employed to direct the Food & Beverage Department through a major refurbishment and rebranding to a Duxton Hotel. Hotel now has 41 rooms, 3 suites, 2 conference rooms, 4 ½* with its market being Corporate NZ, International FITs & Tours. Management in GMs absence.

Kauri Cliffs is a World Class Luxury Lodge and Golf Course set on 4800 acres in the popular Bay of Islands north of Auckland. It was opened on the 1st of January 2001 with the aim of offering 5 Star plus facilities to the FIT Market and also domestic & international golf market.Part of the pre-opening Team of 4 that worked turelessly months before the 1st guest was welcomed, for which we were rewarded with not only a magnificent property but the awards that followed.Within its first year, Kauri Cliffs was awarded Andrew Harpers “Hideaway of The Year 2001”, “Golf Digest Best New International Golf Course 2001” and “Tattlers Top 101 Resort 2001”.

Overall management of this high profile event for a well renowned blue chip company. This project involved not just the day-to-day administration of service outlets, but reporting to four departments within the company on their effectiveness. The project was used by the company to showcase new branding, merchandising, recruitment, and equipment

Sussex. England

Employed as Catering Manager with new contracts at Brighton Racecourse, Sussex County Cricket Club, West Hove Golf Course and Withdean Stadium having been promoted to this position from Assistant Catering Manager. This position involved the direction of operations encompassing all the leisure contracts the company operates. These contracts have an annual turnover in excess of one million pounds, and I was actively involved in all negotiations and tender for new contracts. Successfully managed three World Cup Cricket matches during the competition. Set up contract and service specifications for new Football Stadium

Responsible for maintaining a high standard in this 180 cover Brassiere and Room Service within this 4* Hotel. Reporting directly to the General Manager.

Eastbourne. England

Successful small Hotel to run their 2 AA Rosetted Restaurant and Reception with 14 bedrooms.Working closely with the chef/proprietor to maintain and improve standards in this privately owned well renowned establishment.

Battle. England

Management of Food & Beverage within this Country House Hotel. With the Restaurant recognised in the Michelin and Good Food Guide the emphasis was of quality and standards.
