I am excited to work in the food and nutrition industry as there is much opportunity to make an impact as a future thinker and innovator trying to get ahead of the obesity, disease, healthy food inequality, and environmental crises we now face after years of embracing a Western diet. This work is important because sourcing food locally and modifying recipes to be more plant-based helps with sustainability and improving access to healthy food and education for communities. My classroom, internship and work experiences to date have helped me recognize the value and need for meals sourced from local, organic harvests that satisfy and nourish. The plant-based movement in particular can help combat some of these underlying conditions, but the challenge remains to make them more convenient, available, delicious, healthy, and affordable.
