First Harvest with Bouchaine was in 2010. Officially hired as Full-time Enologist in May, 2013.* Complete daily tasks pertaining to all aspects of winery operations.* Produce work orders and direct flow of winery operations.* Record data from harvest to bottle using Winemaker’s Database and TankNet. * Complete monthly government reporting. (702)* Run all analyses on samples, inbound tanks, fermenting must, finishedwines, including °brix, pH, TA, FSO2, alcohol content, dissolved oxygen, dissolved CO2, as well as malic, acetic, glu/fru and YAN by spectrometer.* Proficient with equipment such as a centrifuge, DMA (portable density meter), refractometer, SO2 by aeration/oxidation, spectrophotometer, alcolyzer, carbodoseur, pH meter, dissolved oxygen meter and auto titrator.* Proficient in cellar activities including wine movements, forklift operation, tank preparation, additions, air pumps, impeller pumps, must pumps, steam generator, cross flow filter, various destemmers, gas cylinders, ozone machine, presses and other winery equipment.* Inoculation of fermenters both primary and secondary.* Daily taste evaluations of grapes and wines from pre-harvest samples, fermenting tanks, barrel samples, potential blends through bottling of finished wines. * Sensory evaluations skills, including: ability to detect and discriminate subtle differences in wine, such as acidity, alcohol, flaws, tannins, fruit and wood flavors* Assist in bottling including line set up and QC measures.* Order all supplies to keep Laboratory fully functioning.
