I am a food scientist and educator with more than 14 years of experience in the food processing industry and teaching. I also provide technical support to international organizations such as FAO with food security and food processing-related projects.I have been working as an Assistant Professor at the Department of Applied Sciences, School of Sciences, Fiji National University, Suva, Fiji, since March 2022. Before that, I worked as an Assistant Professor at the Department of Food Technology, Jain (Deemed-to-be) University, Bangalore, India (June 2021-Nov 2021), and the Amity Institute of Food Technology, Amity University Uttar Pradesh, Noida, India (Jan 2011-Dec 2019). I have also worked as a Product Development Consultant at Artisanal Drinks for & Stirred Cocktail Mix (Apr 2018 -Jul 2019) and as a Shift Brewer at SOM Distilleries & Breweries Ltd., Bhopal, India (Dec 2009 - Dec 2010) and as a Trainee Brewer at Solan Breweries, Mohan Meakin Ltd, Solan, India (Sept 2009-Dec 2009).I hold a PhD in Food Technology from Amity University, Uttar Pradesh, India, on the topic "Studies on fermented millet-based products." I also have a postgraduate diploma in management from IGNOU, New Delhi.I have authored several research articles on various topics related to food science, food sustainability and food technology, such as the mathematical modelling of water absorption kinetics, the effects of wet processing on the physicochemical and functional characteristics of millet flour, and the fermentation kinetics of sorghum grain.Specialities: Food technology, beverage industry, plant design, unit operation, biochemical engineering, process control (bioprocessing & food processing), Quality Control.
