The Coast to Cow to Consumer project (C3) is a collaborative research effort headed by scientists at Bigelow Labs and includes a large team of researchers and industry experts exploring the potential for seaweed as a feed supplement to reduce methane emissions in dairy cattle. Working with Prof. Jen Meredith and Prof. Michael Donihue, research efforts will explore issues related to the economic footprint of Maine's emerging seaweed aquaculture industry and locational characteristics related to topics involving the social license to operate and resilience among Maine's coastal communities. Additional research efforts also include applications of AI/ML Large Language Models in labor economics.
