Following university, I relocated to Sydney AU and started a graduate program at DHL where I worked in various roles for >5 years and was honoured to receive the “DHL Employee of the Year” award. Since moving back to the UK, I decided to follow my true passions and am pursuing a career in the world of catering, drawing on my experience in implementing and managing projects. This led to the development of The Roost LDN, a neighbourhood "chicken" shop, which was so prevalent back in AU and seemed to be missing back in the UK.Moving back just in time for lockdown (well or poorly timed?!) allowed me to explore this idea more and within a couple of months The Roost LDN was operating out of home and delivering food to the local neighbourhood. Within a couple of months I needed more space - a local pub kitchen whilst they were inoperable was the obvious space for the "takeaway" venture. It went well and I had a proof of concept and quickly found somewhere for The Roost LDN to expand on its own, more permanent terms. Following investment, we opened up our very own space on a high street which has been going great guns since. There have been and still are a number of struggles that we are facing, but we try to continously evolve and adapt and work out our best plan moving forward. WIP.
