I trained and supervised inmates in the preparation and serving of three daily meals for the general population and staff in a correctional kitchen. I provided continuous guidance to workers assigned to positions such as butchers, cooks, bakers, vegetable preparation, line servers and sanitation. This also included the use of machinery and equipment. I was responsible for keeping accurate food inventories and accountability of tools.
