My duties involve ordering of stock and the control of the 2 chefs underneath me, helping with the filling in of HACCP forms and all the relevant health and safety fridge temp forms etc and making sure a very high standard of due dilligence is kept. I have found working under a very good and knowledgeable French head chef has made me into the chef I am today, I am stronger, more determined and a lot more confident in my own ability, I want to work at the top level of being a professional chef and getting to know the basics and getting the experience in running the kitchen myself has led me in good stead for the future and has made me even more determined to aspire to be the top chef that i know i can be. -
