CurrentBrewhouse Operations:* Manage brewing processes: water salt adjustments, milling, mashing, lautering, boiling, whirlpooling, knockout, wort aeration, yeast pitching, and grain & trub removal. Perform CIP for equipment, including heat exchanger. Handle specialty ingredients, kettle souring, and cereal mashing.Cellar & Packaging Operations:* Perform CIP for fermenters and BBT, including scrubbing, autoclaving, sanitizing, checking gravities and pH readings. Monitor fermentation and glycol controls.* Manage spunding, dry hopping, yeast harvesting, chilling, fining, purging, transferring, and barrel aging. Conduct CO2 level checks and keg filling.* Clean beer lines, faucets, and couplers regularly. Track BBT levels, calibrate pH meters, and ensure low dissolved oxygen (DO) levels through thorough cellar work.Recipe Formulation:* Design recipes based on equipment profiles, water chemistry, mash parameters, and ingredient ratios. Adjust for target OG, SRM, IBU, yeast strain, fermentation temperatures, and CO2 volumes for each beer style.Quality Control:* Conduct cell counts, pitch rate calculations, forced VDK tests, yeast viability checks, and HLP testing. Perform sensory evaluations, including True-To-Target testing, and off-flavor recognition.Brewery Admin Operations:*Schedule weekly brewhouse activities, manage inventory and raw material procurement, track/report inventory, and monitor production costs.Front of House:*Lead weekly staff training on beer, brewing processes, sensory skills, and service standards. Support bar staff with draft system troubleshooting. Develop beer-related content, including menu descriptions, food pairings, and promotional materials.
