•Worked on a project to develop cool storage structures for farmers to improve the storage life of perishable produce. •The project was funded through GCFSI grant, USA (Global center for food system innovation) and collaborated with the Department of Horticulture, Michigan State University, East Lansing, USA. •The project aimed at developing a storage structure to be installed in farms that will keep the fresh produce cooler than ambient temperature thereby increasing its shelf life by 15-20 days•Tasks included building small-scale structure of different materials, designing the instrumentation for recording temperatures of each structure, conducting experiments to vary the temperature inside the structures and analyze the cooling efficiency.•Created three models of the storage structures and compared them by temperature; cost analysis; development and maintenance feasibility to select the final prototype given to the farmers•Demonstrated all three units to farmers for feedback and modified the structures as per their requirements before the final delivery

This project required formulating and implementing a risk based control plan for each operation of the company. •Successfully handled a FDA audit for the cooling plant of the company, with 100% compliance with all food safety standards. The audit included a walk through the cooling facility & a check on the food safety records, company policies for food safety, GMP documents, GAP documents, training records for employees and results for all the microbiological testing. •Active member of the Leafy green management association that included attending bi weekly meetings and monthly forums.•Worked on the project by the California department of public health (CDPH) and Leafy green Management association on detection of cadmium levels in the soil and its uptake by the leafy vegetables. This project included collection of data for the soil quality and annual harvest of leafy greens in the area, testing the products to check the cadmium concentration for the different kinds of soil and setting up the allowable limit for cadmium in the product that will be accepted by the CDPH and FDA.•Studied and researched about the new FSMA (food safety marketing association) rules for produce safety. Worked on incorporating these rules in the HARPC plan developed for the operations of the company.

•Working on improving methods of standardization of color measurements of processed tomato•Analyzing the scattering and absorption properties for different concentrations of tomato paste.•Developing a shelf stable reference standard material for use in color hitch standardization. •Duties include developing an experimental setup to measure the optical properties of tomato using a hyperspectral camera and white light source, calibrate the instruments, study the scattering and absorption trends in different substances including milk and tomato paste, determine the scattering and absorption coefficients using imageJ and SAS software for nonlinear regression for curve fitting, and develop a 3-D model with optical properties similar to the tomato paste studied.
