2015 to 2016 Mackenzie Place Colorado Springs Worked in high volume, high quality line cook/ prep cook fast pace very demanding environment. Helping with menu ideas while expanding my knowledge of food and cooking. 2006 to Present – Worked seasonally (summers) for The Boat Company as Head Chef on their luxury passenger vessels MIST COVE and LISERON in Southeast Alaska. Meal service is very high quality aboard the vessels catering to discriminating passengers with specific dietary tastes, requirements and allergies. Duties and responsibilities include all menu planning, all food ordering (both preseason bulk and weekly re-stock), all meal preparation for 24 passengers and 12 crew and supervision of Sous Chef and Stewards. Also assisted on deck during docking and undocking and was a member of the safety and emergency response team.

Plan and develop menus, Plan and prepare all meals for up to 75 people. Train and organize staff to maintain cleanliness and sanitation. And what ever it takes to get the job done right.

Worked seasonally (2 winters) for Stabbert Maritime as Chef on their research ships in the Gulf of Mexico and Caribbean Sea. Duties and responsibilities included assisting with menu planning and food ordering. In charge of meal preparation for a crew of 45 to 60 on a 24 hour rotating shift with another chef. The crew were of varied cultures so special care was given to accommodate their different tastes which is important to crew on a working ship.
