Studied plant molecular biology and supported Davina Rhodes’ Biofortification lab. Our research focused on plant breeding and nutritional genomics within the bioavailability and storage viability of sorghum (a staple crop in Africa and Southeast Asia) that has been biofortified with vitamin A through selective breeding. My research contributed to our understanding of the genes in the pathway that contribute to the accumulation of vitamin A throughout the plant, and the effect of concentrating vitamin A in the grain and away from other plant tissues. We also were able to determine a more accurate target concentration based on the degradation of vitamin A throughout the storage and processing of the sorghum grain.

Our group's research studied the effect of antioxidant-containing supplements (CBD oil, and Lions Mane Mushroom) on the plaque buildup in the brain caused by Alzheimer's disease by using genetically modified C. elegans (worms) to be a model organism. Overall, we saw a decrease in the rate of plaque build-up over time when either supplement is used alone or together.
