CurrentStarted up PizzArt from scratch in 2016, with my brother Alejandro Fernandez. The first location was inaugurated in December 2016 and the second location in March 2018.- Currently serving an average of 4.000 customers per month in both locations.- Responsible for daily operation of the restaurant with budgeting and P&L responsibilities.- Handle daily cash records, readings, bank deposits and bookkeeping.- Weekly sale and expense analysis.- Direct supervision of 28 employees.- Prepare and distribute payroll.- Developed and maintained an inventory control program for the bar & kitchen resulting in a more consistent inventory of product used and a food cost percentage between 30% ~ 33%.- Checked stock levels and ordered supplies.- Planned and coordinated menus using menu engineering.- Promoted a team atmosphere.- Conduct weekly meetings with staff and employees.- Maintained high standards of quality control, cleanliness and safety.- Currently developing a website for delivery and takeout, also a customer loyalty program.
